The swordfish rolls

The Eve this year we did it to us. Home addobata a party to create the warmth that immediately puts guests at ease and a menu of fish of all respect. This is an opportunity that Richard is looking forward to all year: cook in peace what he wants. And so it

The dish that has been most successful have been the "Swordfish rolls and pears "to that mix of different flavors so that, mixed together, they cancel each other.










Serves 6
12 slices of smoked swordfish
3 small pears
200 g seasoned caciotta
2 tablespoons olive oil extravegine
a bunch of lettuce or arugula 1 lemon
untreated
12 chives pepper

Wash pears, peel and core Privatel, divide each into 4 wedges and sprinkle with lemon juice to prevent them discolouring. Cut into 12 caciotta spicchietti. Clean and wash the lettuce (or rocket) and dry gently. Soak the chives in boiling water for 15 seconds, sgoccolateli and place them on a towel.
Place the slices of swordfish on the work surface and place one on each slice of pear and a few leaves of caciotta and wash lettuce, pepper and wrap each slice to form a roulade. Tied with chives and arrange the rolls on a platter. Drizzle with oil, garnish with strips of lemon peel and serve.

Richard, after cooking all afternoon decided that the toothpicks to close the rolls would have been more than enough ....
